We stayed at the Moon Palace. It's kind of away from the city a little bit, but you get to use all 5 of the Palace Resorts, and they have free shuttles into town. The Moon Palace was a very nice hotel with plenty of activities to offer on their property. You should definitely go all-inclusive no matter where you stay.
I stayed with my friend at the Krystal Cancun. It has a friendly staff, great number of pools to choose from. One word of advice, the beach is a bit rocky in front, but you have a great view. Its an unobstructed view at night.
I stayed there for a week in 2003.

I went to Cancun twice this year. The first time we stayed at the Caribbean Village. I liked it a lot because of it's location (good walking distance) and the pool/beach area was awesome. We had an all-inclusive package which is nice, the hotel has awesome buffet-style eating and its own little 'club' to dance in and drink! The rooms are so/so... but we didn't care because we weren't in them much!
The second time I went we stayed at the Hilton Cancun. It is awesome as well. We weren't all-inclusive this time either. The hotel is beautiful!!! A little further away from clubs, etc.. so that could be good/bad depending on what you're going for, but the bus is cheap and easy! Cancun is a great place! Have fun!
