I'd say you'd have to visit Nyhavn - that is typically Danish. Also, go see the Assistant Cemetery - loads of famous Danes are buried there, including H.C. Andersen. It's a very beautiful place, and very peaceful. In the summertime it serves as a cemetery AND a park, so you'll find people sunbathing and having picnics there.
And of course you'd have to do all the touristy things, like seeing The Little Mermaid, Kronborg (Where Hamlet took place. That is quite a bot north from Copenhagen, but definitely worth a visit), Rosenborg, The national Museum... There's loads and loads of places to visit.
Also, you can#t go to Copenhagen and not visit Tivoli. It is quite expensive, but definitely worth it. It is really beautiful, both during the day with flowers all over the place, and after dark when they turn on the lights. And in the summertime they have a concert every Friday - Friday Rock, which is always a lot of fun.
If you are into amusement parks you should also visit Barken - the worlds oldest amusement park. It is not the best when it comes to the rides, but entrance is free, and it is located in the middle of a beautiful fairytale-like forest.

Uhhh....they speak Danish in Copenhagen so I would scrap the idea of learning Dutch
I think you mean Danish, not Dutch! You don't need to practice Danish - most Danes speak very good English, better than us in many cases.

Do visit Christianas town (sorry that's not the correct name but it's something similar). It's a weird kind of hippy commune in the city with its own laws and way of living - very interesting.
I think you need to learn how to clog and speak danish. You must eat danish rolls over there. Check out the babes, I bet they are hot.
They don't speak Dutch in Copenhagen. Copenhagen is in Denmark, so they speak Danish. Dutch is what they speak in Holland. So just make sure you go to the right country and learn the correct language.
best way to practice dutch is going to the netherlands, amsterdam may be, but definitely not to copenhagen, denmark!
