Edinburgh is the correct spelling. Having been born and raised in Edinburgh, I have never seen the other spelling. Presumably some form of Americanese :-)

Oh, and it is pronounced Edinburra!

The second one is what Americans call Edinburgh and they get the piss taken out of them by the locals for doing it, so don't.
