Saying hi in greek is yiassou,as said above,or just yia...
But almost everyone in Greece speaks english(at least everyone up to 35years of age),so you won't be having any problem.
For example,I greet my friends by saying Hello and not Yia...

I can't help you with Modern Greek but in ancient times it was 蠂伪喂蟻蔚 (or, with Latin characters, "Chaire" pronounced "kaireh") which literally means "Rejoice" but also "Greetings!"
I think you must be polite,so it is during the day you say KALIMERA,and during the afternoon and evening KALISPERA.
I was many times in Greece.
