There are lots of agencies who will arrange all the details for you for a wedding in Greece, especially on Santorini. You can do a search. I know because when I was looking into weddings in Thailand, I saw a bunch of sites for Greece. They will arrange the church, the documentation, whatever.

There aren't so many Catholic Churches in Greece, but Santorini has one. (I also lived in Greece for 3 years, I'm Catholic, and my sister got married on Santorini, though she was married in the Greek Orthodox Church. The Catholic church recognizes a marriage performed by Greek Orthodox priests, but unless you are Greek Orthodox, or your fiance is, the Greek church won't marry you.)
