Drive (or take bus) to Diamond head State Park and walk the short pathway to the rim. The view of the city and ocean is awesome.
Try swimming with the tropical fishes by snorkeling in Haunama Bay-- it is cheap and the fish are beautiful.
Drive around the island and stop at the Blowhole and Waimea Falls. Source(s): I live in Honolulu.

Aside from the beaches:

1. Iolani Palace - the official residence of the Hawaiian monarchy prior to its overthrow in 1893 by American businessmen. It's beautiful and a good introduction to Hawaiian history.
2. Bishop Musuem - Great exhibits on Hawaiian and Polynesian history. A landmark in itself.
3. Tantalus lookout - take a winding road up behind Honolulu to a beautiful panoramic lookout over diamond head and downtown Honolulu. Many tour buses stop here, but if you wait a few minutes between when they leave, you will have the place to yourself usually.
